Mozzarella and fresh tomato slabbed between pieces of my favorite bread. Can lunch get any better than this? I dare not think so! I really miss this sandwich over the winter months when good fresh tomatoes are hard to come by. So I’m so grateful that summer is on its way and I’m bringing back this baby to the weekly menu over and over.
And can you believe my kids don’t like it? It just makes me so sad! They still don’t like tomatoes. We’ve been growing them fresh in our own garden for probably over 5 years. So you would think over time they would become accustomed to them but unfortunately, that’s not the case.
Tell me, do you have some great ideas that would get them to change their minds? I’m all ears if you do and I’ll owe you big time! Maybe in the form of tomatoes or other garden goodies. What do you say? Sound like a deal?
Grilled cheese is just staple classic for lunch. I have to admit though…when it comes to grilled cheese I’ve become a bit of a bread snob. I rarely want store bought sandwich bread for my cheesy goodness. I want some good homemade bread.
I also can’t resist a big ole bowl of delicious tomato soup. I have 2 here on the blog if you need a new one to try. This one is made with fresh tomatoes and is simply scrumptious. This other one is quick and makes use of canned tomatoes which are readily available.

Favorite Grilled Cheese Sandwich
Ingredients
- 2 slices thick sandwich bread
- 1 plum or similar ripe tomato sliced
- 1 tablespoon olive oil
- 1/2 teaspoon Italian seasoning
- 1 ounce sliced mozzarella cheese
- handful fresh basil
Instructions
- Preheat frying pan or panini pan to medium heat. Brush olive oil on one side of each slice of bread. Sprinkle with Italian seasoning. Layer sandwich with mozzarella cheese, tomato, and fresh basil. Place on preheated pan. Grill for about 3 minutes or until golden. Flip and repeat. Remove from pan and enjoy!

When I was younger, I didn’t like tomatoes either – my mom would take fresh tomatoes and pulverize them and take the seeds and juice and mix it with a little water and sugar and I loved this “All natural Tomato juice” – I’m thinking it would go well with this sandwich! Happy Monday!

I didn’t like tomatoes when I was a kid either! But now I loooove them! We just planted 10 tomato plants in our garden. 10! Can’t wait to make this caprese grilled cheese with my very own tomatoes : )

I am 45 and still don’t like tomatoes. I married a chef and we grew them in the garden every year. Different types, different sizes. Would try them every year…and to no avail, still don’t like em. I love a great grilled cheese though. Would your kids try avocado? It’s great. Thin sliced zucchini? They both go with basil and cheese.
