Goat Cheese Pesto Tomato Appetizer – Layers of creamy goat cheese, basil pesto and topped with herb tomatoes. 10 minute layered starter, perfect for parties!
I’ve had this recipe idea on my radar for weeks. I just keep thinking of pairing these flavors together for an over the top combo of deliciousness. I couldn’t decide if I should turn this goat cheese, pesto and tomato idea into an appetizer or a sandwich. As you can clearly see, I went with the appetizers. No regrets! But I can always come up with a delicious sandwich later on.
This appetizer is amazing. The layers ooze into one another creating a stunning contrast of color and flavor. I couldn’t have eaten half of it myself but decided that wouldn’t be good for my growing hips problem.
I pulled this starter together in less than 15 minutes, so it’s perfect for last-minute guests. I also envision it making an appearance at holiday gatherings when you need JUST ONE MORE recipe to serve. This would be perfect!
I lived most of my life without goat cheese. Now that I know how much I enjoy it, I’ve been taking advantage. I made these cucumber goat cheese bites in the beginning of the year and feel head over heels in love with them! Last year I also shared with strawberry goat cheese bruschetta which was so tasty. Another great appetizer. Goat cheese has also made an appearance in dinner dishes too. You may really enjoy this variation of chicken pasta stuffed shells. Our family loved them!

Goat Cheese Pesto Tomato Appetizer
Ingredients
- 2 Roma tomatoes diced
- 1 teaspoon red wine vinegar
- 1 teaspoon olive oil
- 1/2 teaspoon Italian seasoning
- 1/4 cup fresh pesto
- 2 - 4 ounces each goat cheese logs
Instructions
- In a small bowl combine chopped Roma tomatoes, red wine vinegar, olive oil and Italian seasoning. Mix together and set aside.
- On a medium size plate or platter, spread goat cheese into a flat circle. About 1/2-3/4" depth is perfect. SEE Notes for a method.
- Spoon pesto over goat cheese layer. Top with Roma tomato mixture.
- Serve immediately.
Notes
Take a square piece of wax paper that's at least double the size of the plate you'll be using. Fold the wax paper in half. Cut out a circle. (If you open the wax paper, it's a double circle.)
Fold the wax paper. Spread goat cheese in a round circle on the wax paper. Flip up the other end over the goat cheese. Flatten with the palm of your hand or another plate. You now have a prettier, flat layer. Proceed with recipe. 🙂
