Cheesy Sausage Hash Brown Bake – Real ingredients, real good. No cream of chicken soup, made with sour cream, fresh eggs, real cheese and ground sauage. Favorite family breakfast!
Do you ever get an insatiable urge for something? I loved that hash brown casserole that you’d find at potlucks. I stopped making it because I refuse to buy the canned cream of chicken soup or any canned soup for that matter. I’ve been trying to cut out lots of processed foods.
We still eat some but I try to find a happy medium. Canned soups are out the window. I don’t miss them a bit.
Anyway, I had such a desire for this that I decided to come up with my own version. It was delicious. Everyone wanted second helpings. There was a small bit left and everyone wanted it.
We decided to fight it out. Guess who won? Me, of course!
Heck, I cooked it! At least I shared some of it.

Preheat oven to 350 F.
Gather your ingredients.
Brown sausage for 5 minutes over medium heat, crumbling as you brown.
Add chopped onion. Continue cooking until sausage is thoroughly cooked and onion is translucent. Drain.
Put hash browns in medium bowl. Add sour cream, cheese, eggs. salt and pepper. Stir until combined.
Add sausage/onion mixture. Stir until combined.
Spray a 3 qt baking dish. Spoon mixture in.
Crush cornflakes. I do this by putting in a quart size sealed bag and crushing with the side of a meat mallet.
Add melted butter to cornflakes.
Sprinkle cornflake/butter evenly over sausage hash brown mixture.
Bake at 350 for 45 minutes or until hot and bubbly.

Ingredients
- 16 oz roll breakfast sausage
- 1/2 small onion diced
- 16 oz frozen shredded hash browns thawed
- 8 oz sour cream
- 6 oz cheddar cheese freshly shredded
- 4 eggs
- salt to taste
- pepper to taste
Topping, optional
- 2 cups corn flakes crushed
- 1/3 cup butter melted
Instructions
- Preheat oven to 350.
