Coconut Roasted Almonds – Super simple nuts are coated with sweet coconut. Only 4 ingredients; these are easy to roast. Perfect for the holidays or to give as gifts.
One wonderful day I was cruising through Wegmans bulk section and stopped to get some nuts. Lo and behold I found these beautiful little things called Coconut Macaroon Almonds. I bagged up and few and hit the road.
1 hour later —> I sat at my desk. I opened the bag. I inserted one into my mouth. I inserted all the rest. I put my hand back in the bag. Gasp! They were gone. How did I do that? I know. They’re flipping delicious. That’s how I did it.
So that’s where this recipe came from. Almost every time I have something delicious from out and about, I try to recreate it at home. Well within a certain realm of foods.
These were easy peasy to mix up. It was just the patience of roasting them. AKA – waiting for an hour for them to become golden and perfect for my mouth.
You’ll want to present these as gifts for the holidays. They truly are simple and ideal. I know I enjoy homemade goodies. Who wouldn’t want some delicious home roasted nuts to munch on for Christmas?

Coconut Roasted Almonds
Ingredients
- 3 cups almonds roasted or raw
- 3/4 cup sugar
- 2 tablespoons water
- 1/3 cup unsweetened coconut flakes
Instructions
- Preheat oven to 250 degrees. In a medium bowl combine sugar water and coconut. Stir to combine. Add almonds. Stir for several minutes until fully coated.
- Spread out onto a lightly greased jelly roll pan. Roast for 1 hour, stirring every 15 minutes or so.
- Remove from oven and let cool. Transfer to jars to present as gifts.

Made these and they are really tasty, however I have one issue with the recipe and that is the coconut doesn’t stick to the nuts so you are left with a pile of candied nuts and pile of coconut. Followed the recipe exactly. Any ideas why the coconut didn’t adhere to the nuts???
