There’s one thing in life that is irreplaceable. And that is family. Sometimes you need friend time. But there’s nothing like family time. Recently we got to visit some of husband’s family for the weekend. We just showed up. The 5 of us and a couple duffel bags and not a single thing on the agenda. It was fabulous!
We got to just enjoy one another’s company, great conversation, good food and a church service together. In those moments you realize life doesn’t get sweeter than this. It’s where memories are built and relationships are forged.
Of course every great thing in life includes food right. Even Jesus gathered His closest friends together for the last supper. It marks one of the most memorable meals of all time. And it included food and drink.
I think that’s what life is about: family and friends gathered around savoring each other and the good gifts on the table. So I brought some good gifts. As a food blogger I automatically feel that I must show up places with food in hand. I feel it’s what is expected of me. Usually I can but there are occasions where time doesn’t allow.
But this time I brought easy apple strudel, simply made with puff pastry. It’s easy to put together and doesn’t require much effort. Plus you can still say it’s homemade. And it’s absolutely perfect for this time of year, breakfast, brunch or dessert. Definitely a winner that got rave reviews.

Easy Apple Strudel
Ingredients
- 1 sheet frozen puff pastry dough thawed
- 2 1/2 cup chopped or slices baking apples (I used Granny smith)
- 3 tablespoons sugar
- 1 teaspoon cinnamon
Egg Wash
- 1 egg
- 1 tablespoon water
For Topping:
- 3 tablespoons sugar
- 1 teaspoon cinnamon
Instructions
- Preheat the oven to 375°F. Beat the egg and water in a small bowl with a fork. Set aside.
- Stir granulated sugar and cinnamon in a medium bowl. Add the apples and stir to coat.
- Sprinkle some additional flour on the work surface. Unfold the pastry sheet on the work . Roll the pastry sheet into approximately 16 x 12-inch rectangle. With the short side facing you, spoon the apple mixture onto the bottom half (closer to you) of the pastry sheet. Keep 1 inch of the edge clear without filling for pinching and sealing later. Roll up like a jelly roll. With seam-side down place on a baking sheet. Tuck both ends under to seal. Brush the pastry with the egg mixture. Cut several slits 2-3 inch cuts in the top of the pastry.
- Toss cinnamon and sugar together in a small bowl. Sprinkle over dough. Bake for 35 minutes or until the pastry is golden brown. Let the pastry cool on the baking sheet on a wire rack for 20 minutes.
