Let’s get started. Get your ingredients together.
4 slices ciabatta bread (Homemade is best. :))
8 oz sliced turkey breast lunchmeat
2 oz Muenster cheese
4 slices of bacon – cooked
spinach leaves, handful
onion, sliced thin
1-2 tsp olive oil
dijon mayo Spread:
2 tsp dijon mustard
1 – 1/2 Tbsp mayonnaise
1/4 tsp oregano
butter (Not pictured because I was too worrying about getting everything else together. But honestly, it would have been way too perfect if I didn’t forget anything for my very first blog post!)
Preheat small skillet over medium-low heat. Add a tsp of olive oil. Add sliced onion. Cook stirring occasionally until translucent and soft.
Preheat panini press.
Mix mayonnaise with dijon mustard. Stir in oregano.
Butter ciabatta slices.
Spread 1/2 of dijon mayo spread on one slice of bread. Layer turkey, muenster, bacon, onion and spinach leaves. Top with buttered ciabatta slice. Repeat for second sandwich.
Grill on panini press until golden brown.
Stare at those beautiful grill marks. They fascinate me every time. Just gorgeous.
