Ingredients

ZUCCHINI PIZZA BITES:

  • 2 large zucchini cut into 1/4-inch thick rounds
  • 2 teaspoons canola oil
  • Kosher salt
  • 1/4 cup pizza sauce
  • 1/2 cup shredded part-skim mozzarella
  • 1/4 cup mini turkey pepperoni pieces optional

ENGLISH MUFFIN PIZZA:

  • 4 English Muffins split

MINI BAGEL PIZZA:

  • 2 Mini Bagels split
  • 1/4 cup pizza sauce

NAAN OR FLATBREAD PIZZA

  • 1 whole Naan or Pita Bread
  • 1/4 cup pizza sauce
  • 1 cup shredded mozzarella cheese

FRENCH BREAD PIZZA

  • 1 French Bread Baguette sliced horizontally
  • 1/2 cup pizza sauce
  • 1 1/4 cups shredded mozzarella cheese

TOPPINGS TO YOUR LIKING

Instructions

  1. Add canola oil and preheat skillet over medium-high heat. Add zucchini. Sprinkle with Kosher salt. Saute for 2 minutes on each side.
  2. Remove from pan and place zucchini pieces on a lined baking sheet. Spread each piece with a dollop of pizza sauce. Top with mozzarella cheese and mini pepperoni
