30 Minute Beef Vegetable Soup

Ingredients
  

  • 1 small onion chopped
  • 1 lb ground beef
  • 1 can 14.5 ounces diced tomatoes
  • 2 cans 8 ounces tomato sauce
  • 1 cup water
  • 3 teaspoons beef bouillon or enough bouillon for 3 cups
  • 2 cups chopped cabbage
  • 1 Libby’s® Mixed Vegetable pouch
  • 1 Libby’s® green bean pouch
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1/2 teaspoon salt or to taste

Instructions
 

  • Heat olive oil in a Dutch oven over medium heat. Add chopped onion and ground beef in pot. Heat until cooked through, about 8 minutes.
  • Add diced tomatoes, tomato sauce, water, beef bouillon. Bring to a boil over high heat.
  • Stir in cabbage, Libby's mixed vegetables, and Libby's green beans. Place the lid on the pot cook for approximately 5 minutes until cabbage is cooked through. Serve immediately and enjoy.
