In a medium -large skillet cook chicken over medium-high heat until cooked through (about 8-10 minutes). Season with salt and pepper to taste. Once cool, cut into bite-sized pieces. Set aside.
Cut lettuce leaves into bite-sized pieces. Set aside.
Assemble wraps by layering with lettuce, cooked chicken, diced tomatoes. Drizzle with 1 tablespoon of dressing. Top with a heaping tablespoon of croutons. Wrap up.
