2small yellow squashquartered and cut in 1 1/2 in chunks
1orange or yellow bell peppercut in 1 1/2 inch chunks
3garlic clovesminced
3Tablespoonsolive oil
1teaspoonchopped fresh oregano
1teaspoonchopped fresh basil
salt and pepper to taste
6slicesbaconfried crisp
1/4cupgrated Romano or Parmesan cheese
Instructions
Boil potatoes for 10-15 minutes or until fork tender. Drain.
Preheat grill to medium high.
In a large bowl, combine potatoes, onion, squash, pepper, garlic, olive oil, oregano, basil and salt and pepper. Gently toss to combine. Pour onto grill basket. Grill for 10-12 minutes per side or until lightly charred and tender.
