Pumpkin Pasta and Bacon in a Cream Sage Sauce

Servings: 6 people
- 2 tablespoons olive oil
- 1 teaspoon minced garlic
- 1 cup heavy cream
- 3/4 cup pumpkin puree
- 1/4 cup fresh Parmesan cheese shredded
- 1 tablespoon fresh sage leaves chopped
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 4 1/2 cups pasta (cooked according to package) (campenelle, penne, bowtie, etc.)
- 8 ounces bacon cooked and crumbled
Using a medium saucepan, heat olive oil over medium heat.
Add garlic. Cook and stir for one minute.
Add heavy cream, pumpkin, Parmesan, sage, salt, and pepper. Simmer and stir until it thickens slightly. Cook for 8-10 minutes.
Remove from heat. Toss with hot pasta.
Top with bacon and serve immediately.
