Pumpkin Pasta and Bacon in a Cream Sage Sauce

Ingredients
  

  • 2 tablespoons olive oil
  • 1 teaspoon minced garlic
  • 1 cup heavy cream
  • 3/4 cup pumpkin puree
  • 1/4 cup fresh Parmesan cheese shredded
  • 1 tablespoon fresh sage leaves chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 1/2 cups pasta (cooked according to package) (campenelle, penne, bowtie, etc.)
  • 8 ounces bacon cooked and crumbled

Instructions
 

  • Using a medium saucepan, heat olive oil over medium heat. 
  • Add garlic. Cook and stir for one minute. 
  • Add heavy cream, pumpkin, Parmesan, sage, salt, and pepper. Simmer and stir until it thickens slightly. Cook for 8-10 minutes.
  • Remove from heat. Toss with hot pasta.
  • Top with bacon and serve immediately.
