Coconut Almond Joy Energy Bites

Ingredients
  

  • 1 cup oats old fashioned or quick
  • 1/2 cup unsweetened coconut flakes
  • 1/4 cup sliced almonds
  • 1/4 cup dark cocoa powder I use Hershey's
  • 2 tablespoons coconut oil
  • 2 tablespoons honey
  • 1 tablespoon chia seeds
  • 3-4 tablespoons water
  • 1/2 cup chocolate chips mini or regular
  • 1/4 cup sweetened or unsweetened coconut

Instructions
 

  • Combine first 7 ingredients in the bowl of a food processor. Pulse several times to mix ingredients. Pour water through spout and pulse until mixture is easy to pinch and hold together. Mix in chocolate chips. Refrigerate for 30 minutes.
  • Remove from fridge and shape into 1 inch balls. Roll in sweetened coconut. Stored best in refrigerator.

Notes

To help coconut stick better you can brush with a bit of honey or spray with coconut spray.
