For Salad:

pound
fresh baby spinach

cucumber
chopped
1
apple
seeded and chopped
2/3
cup
shaved Parmesan
1/2
cup
pomegranate arils
For Dressing:

Tablespoons
red wine vinegar
2
Tablespoons
extra virgin olive oil
2
teaspoons
honey
1
teaspoon
Dijon mustard
salt and pepper
Instructions
Place spinach on a plate. Add pomegranate arils, cucumber and apples.
In a small bowl or container whisk together red wine, olive oil, honey, mustard, salt and pepper. Pour over salad. Toss to coat. Garnish with shaved Parmesan.
