Chocolate Chip Buttermilk Waffles

Chocolate Chip Buttermilk Waffles - Made with real buttermilk and mini chocolate chips, this breakfast waffle batter is the perfect way to say Good Morning.

Ingredients
  

  • cups all-purpose flour
  • 2 teaspoons baking powder
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • 2 Tablespoons sugar
  • 2 eggs
  • cups buttermilk*
  • ¼ cup melted butter
  • 1/3 cup chocolate chips

Instructions
 

  • Place flour into a medium mixing bowl. Add the baking powder, baking soda, salt and sugar. Stir with a fork to blend.
  • In a separate mixing bowl, whisk the eggs. Stir in the buttermilk and melted butter (cooled slightly). Add the flour mixture and stir until well mixed. Stir in chocolate chips.
  • The batter should be pretty thick. Spray waffle maker with cooking spray if necessary. Pour about 1/2 cup waffle mixture onto hot waffle iron. Cook until crisp and golden. Serve hot.

Notes

To Make Buttermilk: Place 1 Tablespoon vinegar in a 2- cup measuring cup. Fill to equal a 1 1/4 cups. Let sit for 5-10 minutes.
My waffle maker uses about 1/2 cup for one full waffle.
These freeze well. Once cool, place on a greased baking sheet. Freeze until solid. Remove and place in a reusable freezer bag. Store for up to 2 months.
