Don’t you just love summer? When else do you get fresh vegetables from the garden, excuses to go out for ice cream, tank tops and bare feet in the grass? Can you tell what my favorite season is?
Zucchini. It’s growing like crazy in my garden.
It’s delicious and healthy. Everyone in my family loves it. There aren’t too many veggies I can say that about.
Bacon. Yum, crisp.
Corn. Sweet, white, delicious.
Let’s do a medley. They blend so well together. What a combo.
This is a nice easy summer side dish using what’s in season.
You must make this. Tell the kids you’re making bacon and corn for dinner. Just forget to mention the zucchini part. Most likely they will eat it.
Then you will have a new veggie to add to plate on a regular basis. That’s a score for you!

Zucchini Bacon Corn Medley
Ingredients
- 3 medium corn on the cob or 2 frozen cups corn defrosted
- 2 medium zucchini
- 5 slices bacon
- 2-3 Tablespoons half and half
- 1/2 tsp salt
- 1/8 tsp pepper
- 1 tsp fresh oregano or 1/4 tsp dried oregano
- 1 Tbsp fresh basil or 1/2 tsp dried basil
- 1/4 cup fresh Parmesan cheese shredded
Instructions
- Slice zucchini in 1/2 inch slices. Then quarter those to make nice small pieces.
- Boil corn in unsalted water for 4-5 minutes. Cut corn off the cob. Save any cream goodness you get.
- Fry bacon in skillet until crisp. Move to paper towels to soak up grease. Reserve 1 Tbsp of bacon drippings in pan. Crumble bacon.
- Cook zucchini in bacon drippings for about 5 minutes stirring occasionally. Stir in half and half and seasonings.
- Add corn and cream from corn. Toss lightly and continue just until warm. Remove from heat. Sprinkle with cheese. Enjoy!

It wouldn’t hurt to try. Fresh will give you that creamy milkyness but you can also add a little extra half and half. Let me know if you try it and how it turns out. Thanks!
