30 Minute Beef Vegetable Soup
Ingredients

- 1 small onion (chopped)
- 1 lb ground beef
- 1 can (14.5 ounces diced tomatoes)
- 2 cans (8 ounces tomato sauce)
- 1 cup water
- 3 teaspoons beef bouillon (or enough bouillon for 3 cups)
- 2 cups chopped cabbage
- 1 Libby’s® Mixed Vegetable pouch
- 1 Libby’s® green bean pouch
- 1 teaspoon oregano
- 1 teaspoon basil
- 1/2 teaspoon salt or to taste
Instructions
- Heat olive oil in a Dutch oven over medium heat. Add chopped onion and ground beef in pot. Heat until cooked through, about 8 minutes.
- Add diced tomatoes, tomato sauce, water, beef bouillon. Bring to a boil over high heat.
- Stir in cabbage, Libby’s mixed vegetables, and Libby’s green beans. Place the lid on the pot cook for approximately 5 minutes until cabbage is cooked through. Serve immediately and enjoy.
