Ingredients

  • 3 large Roma tomatoes
  • 1/2 cup yellow or Red onion
  • 1 jalapeno (stem, seeds removed)
  • 2 teaspoons red wine vinegar
  • 1/4 cup chopped fresh cilantro
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • juice from one lime

Instructions

  1. On a cutting board, chop tomatoes and onions. Place in a medium bowl.
  2. On a separate surface,( be sure to protect your hands), dice jalapeno. Add to bowl. Stir.
  3. Add red wine vinegar, cilantro, salt, pepper and lime. Stir together until fully combined. Let sit for a bit to marinade or serve immediately.

Notes

Best eaten within a few hours of preparation. Refrigeration for a bit is alright but not recommended for extended period of time. Best enjoyed fresh!
