For Pumpkin Bread
- 1/2 cup coconut oil
- 3 cups organic sugar
- 4 eggs
- 2 cup canned pumpkin
- 2 cups white whole wheat flour
- 1 1/2 cups all-purpose flour
- 2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon allspice
- 1 1/2 teaspoons salt
- 2/3 cup water
For Glaze
- 2/3 cup powdered sugar
- 3 Tbsp real maple syrup
- 1 Tbsp softened unsalted butter or coconut oil (softened)
- 1/4 tsp cinnamon
- 1 tsp milk (if needed)
Instructions
For Bread:
- Preheat oven to 350. Grease 2 loaf pans.
- Beat together the softened coconut oil, organic sugar, and eggs. Add canned pumpkin; mixing well.
- Combine dry ingredients together in a small bowl. Add alternately to pumpkin mixture with 2/3 cup water. Pour into prepared pans.
- Bake for 1 hour and 15 minutes or until toothpick comes out clean.
For Glaze:
- Combine ingredients in a small bowl. Drizzle glaze over bread. Serve.
- Cook Time: 1 hour 15 minutes
