For Pumpkin Bread

  • 1/2 cup coconut oil
  • 3 cups organic sugar
  • 4 eggs
  • 2 cup canned pumpkin
  • 2 cups white whole wheat flour
  • 1 1/2 cups all-purpose flour
  • 2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1 1/2 teaspoons salt
  • 2/3 cup water

For Glaze

  • 2/3 cup powdered sugar
  • 3 Tbsp real maple syrup
  • 1 Tbsp softened unsalted butter or coconut oil (softened)
  • 1/4 tsp cinnamon
  • 1 tsp milk (if needed)

Instructions

For Bread:

  1. Preheat oven to 350. Grease 2 loaf pans.
  2. Beat together the softened coconut oil, organic sugar, and eggs. Add canned pumpkin; mixing well.
  3. Combine dry ingredients together in a small bowl. Add alternately to pumpkin mixture with 2/3 cup water. Pour into prepared pans.
  4. Bake for 1 hour and 15 minutes or until toothpick comes out clean.

For Glaze:

  1. Combine ingredients in a small bowl. Drizzle glaze over bread. Serve.
