Ingredients

  • For Salad:
  • 1/2 pound fresh baby spinach
  • 1 cucumber (chopped)
  • 1 apple (seeded and chopped)
  • 2/3 cup shaved Parmesan
  • 1/2 cup pomegranate arils

For Dressing:

  • 3 Tablespoons red wine vinegar
  • 2 Tablespoons extra virgin olive oil
  • 2 teaspoons honey
  • 1 teaspoon Dijon mustard
  • salt and pepper

Instructions

  1. Place spinach on a plate. Add pomegranate arils, cucumber and apples.
  2. In a small bowl or container whisk together red wine, olive oil, honey, mustard, salt and pepper. Pour over salad. Toss to coat. Garnish with shaved Parmesan.
