Radish Goat Cheese Sandwich Bites – Simple sandwich bites with fresh goat cheese, radish slices and dill for fresh spring appetizer. Perfect for Mother’s Day brunch, tea parties and any spring gathering.
Ingredients

- 12 slices cocktail-size thin pumpernickel or rye bread
- 4 ounces creamy goat cheese
- 2 tablespoons chopped fresh dill (plus sprigs for garnish)
- 6-8 medium radishes (thinly sliced)
- sea salt (optional)
Instructions
- Spread approximately 2 teaspoons goat cheese on each slice of bread. Top with several radish slices and garnish with some chopped fresh dill. Add a sprinkle of sea salt if desired.
- Serve immediately.
Notes
You can make these a few hours in advance. Just put on a platter. Cover with plastic wrap. Let sit at room temperature for 10-15 minutes before serving.
