Spinach Tortellini Soup

Ingredients

  • 1 Tablespoon olive oil
  • 1 small onion (diced)
  • 1 clove garlic (minced)
  • 6 cups chicken broth
  • 1 can 14 oz diced tomatoes
  • 1 1/2 teaspoons Italian seasoning
  • 1 10 oz package dried tortellini
  • 4 cups packed fresh spinach
  • 1/2 teaspoon salt or to taste

Instructions

  1. In a small stock pot or dutch oven heat oil over medium heat. Add diced onion and cook until softened and translucent. Add minced garlic and cook for a minute more.
  2. Add chicken broth, tomatoes, seasoning.Give it a stir. Bring to a boil over high or medium-high heat. Add tortellini. Cook for about 10 minutes. Stir in fresh spinach. Cook until spinach is wilted, about 2 minutes. Add salt and pepper to taste.
  3. Serve and enjoy.
