  • 2 tablespoons olive oil
  • 1 small onion diced
  • 1 tablespoon minced garlic
  • 1 8 ouncesbag fresh spinach
  • 4 ounces cream cheese softened
  • 1/2 cup mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 1 can artichoke hearts rinsed and drained
  • 1/2 teaspoon salt


  1. Preheat oven to 350 degrees.
  2. In a large skillet heat olive oil over low-medium heat. Saute onions for about 5 minutes or until soft and translucent. Add minced garlic and fresh spinach. Cook and stir until spinach is wilted, about 3-4 minutes. Set aside.
  3. Meanwhile in a medium bowl combine cream cheese, mayonnaise and Parmesan cheese. Mix until thoroughly combined. Add spinach mixture and stir. Chop artichoke hearts and add to mixture. Add salt.
  4. Transfer to a small greased dish. Bake for about 15-20 minutes or until heated through.
