Spring. How I adore thee. With blossoms, greens, bird chirps, longer days what’s not to celebrate? Today I’m celebrating fresh things for spring. And it’s spotlighting radishes. With their vibrant color, crisp texture and crunch, there’s a whole lot to enjoy.
I never knew until recently that my daughter loves radishes. I mean, she’ll just stand there and eat them like an apple. Yes, that’s awesome but it just surprised me. Maybe I should be buying radishes way more often than I do. Since we both love them so much I think I will.
These little bites are so easy to make. Perfect for tea parties, Mother’s Day brunch, bridal showers, baby showers and any spring gathering that you need small bites for. They only use 4 ingredients (plus the optional salt) and they only take minutes to put together. And they’re pretty too!

Radish Goat Cheese Sandwich Bites
Ingredients
- 12 slices cocktail-size thin pumpernickel or rye bread
- 4 ounces creamy goat cheese
- 2 tablespoons chopped fresh dill plus sprigs for garnish
- 6-8 medium radishes thinly sliced
- sea salt optional
Instructions
- Spread approximately 2 teaspoons goat cheese on each slice of bread. Top with several radish slices and garnish with some chopped fresh dill. Add a sprinkle of sea salt if desired.
- Serve immediately.
