Sparkling Blackberry Coconut Spritzer – Refreshing spritzer drink made with the delicious flavor of coconut and fresh blackberries. Perfect summer iced drink leaves your thirst quenched and keeps you dreaming of the beach.
My dear friend Robin invited a small group of ladies to her house one day last week for some chit chat on a recent conference she had attended. I felt blessed to be a part of this conversation with such lovely women of God.
While there she treated us to a delicious lunch and an amazing blackberry drink. If you follow me on Instagram you saw the pic I posted. I was so impressed with this delight. I of course I got the scoop on how to make it. But after getting home I decided to change things up and give it a twist of coconut. Because you can’t ever go wrong with coconut, right?
I’ll answer for you. Right!
I seriously just drank this thing 3 days in a row. It’s that good! I would drink it 3 times a day if I could. So I’m sharing with you because I love you so much.
And I really have to be honest with you here. This was the very first time I split a coconut by myself. And it was quite a comedy show for sure!
Of course I watched some YouTube videos. This one in particular is the one I watched. After draining the coconut I went to the garage. I tried the hammer thing. Nothing’s happening. The concrete floor was looking very hard and enticing. Do you know what’s coming next?
I took it and slammed it. Twice. Second time was the charm. It wasn’t a perfect cut but it worked.
I’m now the coconut opening pro. Feel free to hire me. $5 a coconut. *wink*

Sparkling Blackberry Coconut Drink
Ingredients
- 1/4 cup sugar
- 1/4 cup water
- 2/3 cup blackberries fresh or frozen
- 18 oz sparkling soda
- 12 oz coconut water
- handful fresh blackberries for garnish
- handful fresh sage for garnish
Instructions
- Over medium heat bring water, sugar and blackberries to a slow boil. Turn down to low. Cook for 5 minutes. Remove from heat to cool.
- In individual glasses arrange drink as follows: Pour 2 Tablespoons blackberry syrup mixture followed by handful of ice, 4 oz coconut water, 6 oz sparkling soda. Garnish with fresh blackberries and sage leaves.Enjoy!

Splitting coconuts open is definitely no joke! I remember getting sooo frustrated trying to bust open my first coconut. LOL. This is such a gorgeous and refreshing drink, Melanie! Love the combo of blackberries and coconut so much. 🙂
