Avocado Bacon Egg Salad Sandwich

Description

Creamy avocado substitutes for mayonnaise in this fresh classic sandwich.


Ingredients

  • 6 hard boiled eggs (peeled and halved)
  • 1 ripe avocado (halved, seeded and peeled)
  • 1/2 teaspoon lime juice
  • 1 tsp. Dijon mustard
  • 1/2 teaspoon Kosher salt
  • 2 Tbsp. chopped fresh dill
  • 8 slices of cooked bacon
  • 8 slices sandwich bread

Instructions

  1. Peel and roughly chop the hard boiled eggs. Place in a small bowl.
  2. Combine the avocado and lime juice. Mash using a food processor or mixer until desired texture, chunky or creamy. (I like creamy.)
  3. Add the mashed avocado and Dijon mustard to the eggs. Stir to combine and add in sea salt and dill.
  4. Spread mixture on a slice of bread. Top with 2 slices of bacon. Finish off with a second slice of bread. Serve and enjoy.

Notes

Avocado will turn brown. It’s best to make this recipe and eat it as soon as you prepare it.
