Chicken Cordon Bleu Grilled Cheese

Ingredients

  • 1/2 tablespoon olive oil
  • 6 ounces boneless chicken breast
  • 1/2 teaspoon no salt seasoning blend like Mrs. Dash
  • 4 slices good thick sandwich bread
  • 1 1/2 tablespoons butter
  • 6 ounces sliced deli ham
  • 4 ounces Swiss cheese

Instructions

  1. Heat a grill pan over medium-high heat. Add 1/2 tablespoon olive oil to the hot pan. Trim excess fat off of chicken if necessary. Cut chicken into small strips. Season chicken breast on both sides with a non salt all purpose seasoning. Cook covered until cooked through, turning once halfway through, about 5-7 minutes. Set aside.
  2. Using same pan or panini press, heated. Generously butter one side of each slice of bread. Place buttered sides together. Layer sandwich with cheese, ham and chicken breast slices. Take bottom slice of bread and place on top, butter facing up. Place sandwich on pan. Cook until golden brown on one side, 3-4 minutes. Flip. Cook until golden brown and melted. Cut in half and serve.
