This chicken cordon bleu grilled cheese is for friend or foe. Son or daughter. Everyone will enjoy this delicious sandwich. Young or old. Man or beast. Oops. I don’t know where that came from.
I certainly enjoyed every bite. Maybe I should have shared too. That would have been nice. But when it comes to food you can’t always judge a person by niceness.
Look at the gooey melty cheese. You know you want to go home now and make one, right? Or maybe you are home. Then, what are you waiting for?
I personally am a huge grilled cheese and tomato soup fan. I already have 2 tomato soup (one with fresh, one with canned tomatoes) recipes here on the blog and I have at least 2 more that I’d like to share when I have the time. I dream of gooey drippy cheese being plunked down into a gorgeous red, thick creamy bowl of tomato soup. Oh man. I totally need to go make me some lunch!

Chicken Cordon Bleu Grilled Cheese
Ingredients
- 1/2 tablespoon olive oil
- 6 ounces boneless chicken breast
- 1/2 teaspoon no salt seasoning blend like Mrs. Dash
- 4 slices good thick sandwich bread
- 1 1/2 tablespoons butter
- 6 ounces sliced deli ham
- 4 ounces Swiss cheese
Instructions
- Heat a grill pan over medium-high heat. Add 1/2 tablespoon olive oil to the hot pan. Trim excess fat off of chicken if necessary. Cut chicken into small strips. Season chicken breast on both sides with a non salt all purpose seasoning. Cook covered until cooked through, turning once halfway through, about 5-7 minutes. Set aside.
- Using same pan or panini press, heated. Generously butter one side of each slice of bread. Place buttered sides together. Layer sandwich with cheese, ham and chicken breast slices. Take bottom slice of bread and place on top, butter facing up. Place sandwich on pan. Cook until golden brown on one side, 3-4 minutes. Flip. Cook until golden brown and melted. Cut in half and serve.
