Chocolate Caramel Cracker Candy – Saltine crackers layered with homemade caramel and drizzled with dark chocolate. Perfect candy for gifts or bake sales.
I came across this recipe while skimming through the latest Good Housekeeping Magazine during my haicut. Sometimes I feel this is the only time I get to sit, relax and let someone else massage my scalp. Ahh, yes. If you’re a mother you know how good this feels.
You mean to tell me that I actually get to be served while not worrying about who’s hitting who? Or who might be in the kitchen raiding the pantry without permission? Yes! It’s my one and only pampering. And I do not take it for granted. Nor do I ever EVER cancel a hair appt. That would be a big no-no. A girl’s gotta have an escape. And this is mine.
Anyhow, this recipe popped off the page and I couldn’t resist giving it a try. I only changed it up a bit. I used whole wheat saltines instead of regular. But obviously, both work well. I also added the chocolate glaze. Well, if you’ve known me for awhile you knew that was coming. Every part of my life needs chocolate. And cracker candy is no exception.
I’ll be honest. When I made this I wasn’t sure that I would put it on the blog. I just wasn’t sure if it would be blog-worthy. But it surprised me that we all really liked it. I love the fact that it pulls together quickly. No bake. No stovetop. Just the microwave. And you have yourself a quick delicious snack.
Let me know if you give this chocolate caramel cracker candy try. I think you’ll be impressed.
Have a beautiful day!
Til we meet and eat again,
Melanie

Chocolate Caramel Cracker Candy
- Total Time: 55 minutes
Description
Saltine crackers with caramel and chocolate for a sweet treat that’s perfect for gifts and snack.
Ingredients
- 40 saltine crackers
- 1 cup 2 sticks butter (no substitutions)
- 1/2 cups granulated sugar
- 1/2 cups packed light brown sugar
- 2 teaspoons vanilla extract
- 2 tablespoons cider vinegar
- 2.5 oz chocolate (semi sweet or dark)
Instructions
- Line large jelly-roll pan with aluminium foil; lightly coat with nonstick cooking spray. Arrange crackers on pan in single layer.
- In a large microwave-safe bowl, microwave butter on high 1 minute, or until melted. Whisk in granulated sugar, brown sugar, vanilla, and vinegar until smooth. Microwave uncovered on high 6 minutes in 2-minute intervals, whisking thoroughly after each interval before returning to microwave. Microwave 1 to 2 minutes more or until dark amber (or until candy thermometer registers 320 degrees F).
- Carefully remove caramel from microwave; pour over crackers in pan. Spread caramel into a thin layer using offset spatula; tap jelly-roll pan on a flat surface to evenly distribute.
- Melt chocolate in a microwave-safe bowl for 1 minute. Stir. Heat in additional 30 second intervals stirring after each one until melted and smooth. Let cool 15 minutes, or until caramel hardens;
- Use a spoon to drizzle chocolate over caramel. Let it set for 15 minutes. Break into pieces.
Notes
IMPORTANT: Use a large bowl for ingredients to expand in the microwave. I used a large 8-cup capacity glass bowl with a handle.
Bowl and ingredients get very hot in the microwave. Use caution.
Once the caramel ingredients are cooked work quickly and cautiously. Use an offset spatula to spread the caramel out over the crackers. The caramel hardens up pretty fast.

Every part of MY life NEEDS chocolate too – adding chocolate to these was an AWESOME idea! These look wonderful – thanks for sharing this recipe – I saw a similar recipe once in a magazine too – involved sandwiching peanut butter between two Ritz crackers and dipping it in melted chocolate and letting it harden.
Happy Monday Melanie
One of my favorite recipes. EVER!!!
I’ve been seeing this magic saltine creation pop up now and again on different blogs and it intrigues me every time! Maybe it’s a sign that I finally need to try it! Looks SO good!
Hair appointments are the best! It’s so nuts when I sit down, and they bring me a cappuccino, and I get to sit there for 2 hours having my hair highlighted, cut, and blown dry better than I could EVER do it myself! I leave feeling like a whole new woman. These saltine candies sound AMAZING! Bet this would be great to make and serve after a summer BBQ : )
Cracker candy is the BEST! I want a big plateful of this right now!
This kind of candy is a favorite around my house, too! We eat it a lot around Christmas. And Passover too (with matzo). It’s incredibly addictive! Ps- I know exactly what you mean about the hair appointments. Pure bliss!
I hear you on the magazines, I have a stack of magazine just waiting to be read! So glad that you found this caramel candy because it looks incredible. I wouldn’t be able to stop snacking on it!
love what a simple snack this is Mel, I could easily see myself gobbling up a whole tray! and I’m not a mom yet, but I still worship my hair appt “me time”, so I can only imagine how good it feels with kids running around! glad you decided to post this 🙂
That happens to me sometimes, Melanie. I make something ‘for the blog’ and end up doubting whether or not to post it. I’m so glad you did post this, though. It honestly looks like such a delicious treat, not to mention easy to make, which I’m guessing is pretty important to you too when you’ve got your kiddies running around. 🙂
I love cracker candy! Once I start eating it, I just can’t stop! 🙂 And girl, I so get what you mean about hair appointments. The BEST ever.
This is perfect for me to make for our theatre this Friday! Lots of small pieces for lots of people during intermission! They look wonderful! Pinned!
How long will this stay fresh and crispy? Is it best stored air-tight, or is it best stored in the open? I’m thinking of making this ahead of time for a weekend trip. Thanks!
I would say 4-5 days. I had some that was 6 days old and you could start to tell that it wasn’t fresh. I stored mine in a airtight Tupperware container. Just be aware of the temperature. If it’s humid or warm you will want to store it in a cool place away from direct sun and heat. Hope you enjoy it! We certainly do. 🙂
this does look addictive!
Perhaps it is my microwave…or that I used dark brown sugar…..but the first batch burned terribly on the last 2 minutes heating. Second batch was great! Thanks!
That’s a bummer. But I’m so glad the 2nd one worked out well for you. Merry Christmas Valorie! Thanks for taking the time to leave your feedback!
It was a success. I find that this recipe is less sugary than any other recipe. Could it be the mix of white sugar with brown sugar? … or maybe the cider vinegar? But I really like how the taste turned out. Only thing that I couldn’t get done right was the caramel. Turned out like fudge instead of caramel. I didn’t say a word about it and everyone enjoyed it.
