For Cheesecake Filling
- 1 package (8 ounces cream cheese, softened)
- 1/2 cup sugar
- 1 egg
For Chocolate Chip Cookie Dough
- 2 cups plus 2 tablespoons (10 5/8 ounces all-purpose flour)
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 12 tablespoons 1 1/2 sticks unsalted butter, melted and cooled slightly
- 1 cup packed (7 ounces light brown sugar)
- 1/2 cup (3 1/2 ounces) granulated sugar
- 1 large AND 1 egg yolk
- 2 teaspoons vanilla extract
- 1 cup semisweet chocolate chips
Instructions
For Cheesecake Filling
- Preheat oven to 350F.
- In a large bowl, beat the cream cheese, sugar and egg until smooth. Set aside.
For chocolate chip cookie dough
- Whisk the flour, baking soda, and salt together in a medium bowl; set aside.
- With an electric mixer, beat the butter and sugars until thoroughly blended and creamy, about 2 minutes. Add the egg, yolk, and vanilla and mix until combined. Add the dry ingredients and beat at low speed just until combined. Stir in the chocolate chips.
Assemble
- Press only half of the cookie dough onto the bottom of a greased 8-in. square baking pan.
- Spread the cream cheese mixture over the cookie dough. Crumble remaining dough over top.
- Bake for 30-35 minutes or until lightly browned and looks set.
