Cranberry White Chocolate Chunk Cookies
For some random reason this week, I got in the mood for cranberries. So I put them on my salad. Then I started thinking I wanted them in a cookie.
I went from totally good and healthy right to the gutter of desserts. I live, eat and think desserts in case you haven’t been around me enough to know.
Now the weirdest part of all is that I actually wanted to make a cookie without chocolate. Melanie, a dessert without chocolate? I demand we bring back the real Melanie right now.
No, I actually do eat some desserts without chocolate. Few. But there are some like coconut custard pie, shoo fly pie, and….Wait, can I really not think of any others? This is bad.
So back to cranberries. I decided to put them in a soft delicious cookie and grabbed some white chocolate to compliment the flavor.
I preceded to tell my hubby that I truly couldn’t believe how much I like these cookies. They were so good that I ate 3 in the middle of the day. 3 cookies before dinner even. Geez. What am I trying to do? Gain 10lbs overnight?
So 3 cookies show me that I really REALLY like these cookies. I told hubby that it was crazy that I liked a cookie so much that didn’t even have chocolate in it. He then pointed out that they do indeed have chocolate, white chocolate. That’s right. Half my brain must have washed down with the cookies.

Cranberry White Chocolate Chunk Cookies
Ingredients
- 1/2 cup unsalted butter softened
- 3/4 cup organic sugar
- 1 tsp vanilla
- 1 large egg
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups all purpose flour
- 6 oz white chocolate squares roughly chopped
- 3/4 cup cranberries
Instructions
- Preheat oven to 350.
- Beat butter, sugar and vanilla together until creamy.
- Add egg. Beat well.
- Mix in flour, baking soda and salt until well combined.
- Stir in cranberries and white chocolate.
- Drop by rounded tablespoon onto ungreased baking sheets.
- Bake for 9 to 11 minutes or until edges are light brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

These look great. Would you recommend doubling (or tripling) this recipe. I have a Christmas cookie exchange next weekend and need to bring 6 dozen.

I haven’t specifically doubled this particular recipe but I’ve done it with other cookie recipes without any hassle. Hope it works out great for you! These are delicious.
