Description

Soft muffins made with cream cheese and fresh cranberries. Perfect for breakfast, brunch for Christmas and the holidays.


Ingredients

  • 1/2 cup butter (softened)
  • 1/2 package (4 ounces cream cheese, softened)
  • 3/4 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 3/4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh or frozen cranberries

Instructions

  1. Preheat oven to 350°.
  2.  In a large bowl, cream butter, cream cheese and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. 
  3. Combine flour, baking powder, and salt; stir into creamed mixture just until moistened. Fold in cranberries.
  4. Fill greased or paper-lined muffin cups three-fourths full. 
  5. Bake 20-25 minutes or until a toothpick inserted in the muffins comes out clean. Cool 5 minutes. Remove to cooling rack to cool completely.
