Description
Soft muffins made with cream cheese and fresh cranberries. Perfect for breakfast, brunch for Christmas and the holidays.
Ingredients

- 1/2 cup butter (softened)
- 1/2 package (4 ounces cream cheese, softened)
- 3/4 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 3/4 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup fresh or frozen cranberries
Instructions
- Preheat oven to 350°.
- In a large bowl, cream butter, cream cheese and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla.
- Combine flour, baking powder, and salt; stir into creamed mixture just until moistened. Fold in cranberries.
- Fill greased or paper-lined muffin cups three-fourths full.
- Bake 20-25 minutes or until a toothpick inserted in the muffins comes out clean. Cool 5 minutes. Remove to cooling rack to cool completely.
