Ingredients

- 2 lbs potatoes (peeled and cubed)
- 1 bunch of green onions (chopped)
- 2 small yellow squash (quartered and cut in 1 1/2 in chunks)
- 1 orange or yellow bell pepper (cut in 1 1/2 inch chunks)
- 3 garlic cloves (minced)
- 3 Tablespoons olive oil
- 1 teaspoon chopped fresh oregano
- 1 teaspoon chopped fresh basil
- salt and pepper to taste
- 6 slices bacon (fried crisp)
- 1/4 cup grated Romano or Parmesan cheese
Instructions
- Boil potatoes for 10-15 minutes or until fork tender. Drain.
- Preheat grill to medium high.
- In a large bowl, combine potatoes, onion, squash, pepper, garlic, olive oil, oregano, basil and salt and pepper. Gently toss to combine. Pour onto grill basket. Grill for 10-12 minutes per side or until lightly charred and tender.
- Arrange on a platter. Top with bacon and cheese.
