Grilled Potato Medley with Bacon

Ingredients

  • 2 lbs potatoes (peeled and cubed)
  • 1 bunch of green onions (chopped)
  • 2 small yellow squash (quartered and cut in 1 1/2 in chunks)
  • 1 orange or yellow bell pepper (cut in 1 1/2 inch chunks)
  • 3 garlic cloves (minced)
  • 3 Tablespoons olive oil
  • 1 teaspoon chopped fresh oregano
  • 1 teaspoon chopped fresh basil
  • salt and pepper to taste
  • 6 slices bacon (fried crisp)
  • 1/4 cup grated Romano or Parmesan cheese

Instructions

  1. Boil potatoes for 10-15 minutes or until fork tender. Drain.
  2. Preheat grill to medium high.
  3. In a large bowl, combine potatoes, onion, squash, pepper, garlic, olive oil, oregano, basil and salt and pepper. Gently toss to combine. Pour onto grill basket. Grill for 10-12 minutes per side or until lightly charred and tender.
  4. Arrange on a platter. Top with bacon and cheese.
