- 1 1/4 cups all purpose flour
- 1/3 cup sugar
- 1/3 cup brown sugar (packed)
- 1/4 teaspoon nutmeg
- 1/8 teaspoon salt
- 1/4 cup cold butter
- 3/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 cup mashed banana
- 3 tablespoons milk
- 1 large egg
- 1/4 cup flaked coconut (I used unsweetened)
- 1 tablespoon water
Instructions
- Preheat oven to 350 degrees.
- In a large mixing bowl, combine flour, sugar, brown sugar, nutmeg and salt. Cut in butter to resemble crumbs. Set aside 1/2 cup of this mixture.
- Combine remaining flour mixture with baking powder and baking soda. Add banana, milk and egg. Stir well. Spoon into a greased 8” square pan. Set aside.
- Mix reserved flour mixture with coconut and water. Sprinkle over batter in pan. Bake for 30 minutes. Cool on a wire rack.
