This is my time of the year friends! I love me some good ole’ summer weather. And May was quite nice to us here in Pennsylvania. We had plenty of warm sunshiney weather. Yes, I just said sunshine-y. New word.
It was awesome. I’ve been wearing my flip-flops, my summery skirts and dreaming of strawberry season. And it’s here. We got to do our first picking this Saturday. We only picked 3 quarts but that’ quite alright because we’ll definitely be going back. Even Saturday in the hot mid 80s picking berries didn’t bother me a bit.
I’d rather be hot and sweaty then chilled to the bone. High 70’s, low 80’s year round….that’s my perfect weather!

So of course as soon as the strawberries entered the house I needed to make like 6 different strawberry dishes. This strawberry bruschetta with goat cheese was one of them. I just adore goat cheese lately. Plain, herb or any other flavor I can get my lips on.
And lately I’ve been better about planning my posts a bit in advance. But this recipe got pushed to the front because I knew you’d love just as much as I did. Even my 3 kids inhaled it. And that is pretty awesome in my book.

Strawberry Goat Cheese Bruschetta
Ingredients
- 1 French baguette sliced (about 1/2 inch thick)
- 1 cup chopped strawberries
- 2 tablespoons chopped fresh basil
- 1 tablespoon olive oil
- 1 tablespoon raspberry wine vinegar
- 7 ounces goat cheese
Instructions
- Preheat oven to 375 degrees. Place baguettes slices on baking sheet and bake for 5 minutes. Meanwhile stir together strawberries,fresh basil, olive oil and raspberry wine vinegar.
- Spread goat cheese on baguette slices. Spoon strawberry mixture on top of goat cheese. Serve immediately.
