ZUCCHINI PIZZA BITES:

  • 2 large zucchini (cut into 1/4-inch thick rounds)
  • 2 teaspoons canola oil
  • Kosher salt
  • 1/4 cup pizza sauce
  • 1/2 cup shredded part-skim mozzarella
  • 1/4 cup mini turkey pepperoni pieces (optional)

ENGLISH MUFFIN PIZZA:

  • 4 English Muffins (split)

MINI BAGEL PIZZA:

  • 2 Mini Bagels (split)
  • 1/4 cup pizza sauce

NAAN OR FLATBREAD PIZZA

  • 1 whole Naan or Pita Bread
  • 1/4 cup pizza sauce
  • 1 cup shredded mozzarella cheese

FRENCH BREAD PIZZA

  • 1 French Bread Baguette (sliced horizontally)
  • 1/2 cup pizza sauce
  • 1 1/4 cups shredded mozzarella cheese

Instructions

  1. Add canola oil and preheat skillet over medium-high heat. Add zucchini. Sprinkle with Kosher salt. Saute for 2 minutes on each side.
  2. Remove from pan and place zucchini pieces on a lined baking sheet. Spread each piece with a dollop of pizza sauce. Top with mozzarella cheese and mini pepperoni
