Fresh Homemade Tomato Salsa – Fresh tomatoes combine with onion, jalapeno, cilantro and seasonings for a perfect homemade Mexican flavor. Great summer starter or appetizer recipe for any meal or party.
This fresh homemade tomato salsa is my go-to snack in the summer. I had such a huge harvest of tomatoes this year. It was amazing. Definitely my best year ever. I can’t say that I was excellent or amazing about harvesting them at the right time but I’ve used them for a lot. I’ve done 2 batches of pasta sauce, a batch of tomato soup and lots of homemade salsa.
The problem with my tomato harvest is that it comes in right during the thick of August when we are usually heading to the beach. This can create a problem as you can see. I’m down in sunny North Carolina while my tomatoes are sitting for 7 days. I found that this year they did pretty well, though. I picked all I could before I let and again when I returned. I didn’t notice much go to waste at all, which of course is the goal.
I have to admit though I’m almost tired now of processing tomatoes so if you have any great, quick ideas for storing them I’d love to hear them.
I’ve been doing the whole food mill thing for sauce and soup and it’s time-consuming for sure. Not to mention all the clean up. I need to hire a cleaning lady. Haha. One that doesn’t mind walking around my kitchen and cleaning up after all my messes. That’s not going to happen. 🙂 So it comes down to the fact that I’ve got to create less mess.
That’s one thing this fresh homemade tomato salsa is great for. Not much prep. Not much cleanup. Just one cutting board and a knife. I can handle that after all that stuff. I’ve got this! And so do you. Enjoy the last breath of summer. I sure am.

Fresh Tomato Salsa
Ingredients
- 3 large Roma tomatoes
- 1/2 cup yellow or Red onion
- 1 jalapeno stem, seeds removed
- 2 teaspoons red wine vinegar
- 1/4 cup chopped fresh cilantro
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- juice from one lime
Instructions
- On a cutting board, chop tomatoes and onions. Place in a medium bowl.
- On a separate surface,( be sure to protect your hands), dice jalapeno. Add to bowl. Stir.
- Add red wine vinegar, cilantro, salt, pepper and lime. Stir together until fully combined. Let sit for a bit to marinade or serve immediately.
