Chocolate Coconut Bark – Delicious thin chocolate candy bark topped with shredded coconut. Simple treat made in minutes makes a perfect gift to give.
I remember several years ago when I hosted a girl’s gathering night and a friend brought this most simple chocolate coconut bark. (Her’s featured almonds as well. I left those out because of nut allergies. But feel free to include them if you’d like!)
Anyway, her bark was such a hit and it was so simple! So as I prepared for gifts to give from the kitchen I couldn’t resist sharing bark because it’s as simple and delicious as you can get.
The best part of this is the chocolate. Never mind. It’s definitely the coconut. Wait, i think it’s the simplicity. See, there are a bunch of reasons to love this simple treat. And it’s not just for the holidays either. You can surely make this for Valentine’s Day or whenever you are in the mood for some chocolate goodness. I have chocolate attacks quite often, so this recipe comes to the rescue when you’ve got a craving you can’t control.
Here’ the low down. Melt chocolate wafers. I use Ghiradelli melting wafers and I love the creamy smooth texture of these. They’re perfect! After you melt the chocolate, just pour onto a wax paper lined tray. Sprinkle immediately with your coconut and let sit until hardened. Break into pieces and enjoy.

Chocolate Coconut Bark
Ingredients
- 3 cups chocolate wafers
- 3/4 cup shredded coconut sweetened or unsweetened
Instructions
- Melt chocolate in a microwave-safe bowl on 50% power for 30 seconds. Stir. Microwave in additional 15 seconds increments on 50% power, stirring after. Do this until fully melted.
- Spread onto waxed cookie sheet. Sprinkle with coconut.
- Let sit for 30 minutes or until hardened. Break into pieces.
