You find the perfect recipe and realize you’ve got what it takes to put dinner on the table tonight. Oh yeah! Now we’re doing the happy dance!
You know what? I’m so happy to be serving up this soup. Ever since my Mom introduced me to Williamsburg Inn Turkey Soup (with rice) I’m been in love with creamy style rice soups. She made it following every big Thanksgiving meal. It’s just what we do with leftovers.

And I’ve been planning on bringing you a chicken and wild rice soup for some time. It’s finally here. I made this recipe for a Soup Gathering that we had. I loved that I could prep it well in advance so that I didn’t have to do last minute cooking when expecting guests. As a matter of fact, you can even prepare the day before and refrigerate. Then just pour it back into the slow cooker and heat on warm for about 2 hours.
All the last minute work takes is about 5 minutes. I call that working smarter when it comes to serving and preparing. No one needs to be rushing around like a crazy person right before your friends or family arrive. If you’re looking for other last minute meal ideas be sure to check out this post.

Slow Cooker Creamy Chicken Wild Rice Soup
Ingredients
- 1 cup wild rice
- 1 1/2 lbs boneless skinless chicken thighs may also use boneless breasts
- 1 cup chopped carrots
- 1/2 cup chopped celery
- 1/2 cup diced onion
- 1 teaspoon minced garlic
- 6 cups chicken broth
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried sage
- 4 tablespoons butter
- 1/2 cup flour
- 1 cup milk
- 1 cup half and half
Instructions
- Rinse the rice in a colander.
- Place the rice, chicken in the pot of a slow cooker. Add the carrots, celery, diced onion, and garlic.
- Add chicken broth and rice. Cover and cook on high for 3-4 hours or low for 7-8 hours.
- Remove chicken to a cutting board and shred into pieces. Return to pot.
- Meanwhile, in a medium saucepan, melt butter. Stir in flour to make a roux. Slowly add milk and the half and half. Continue to stir until thickened.
- Add to slow cooker pot. Stir. Season to taste with salt and pepper.
- Serve warm with fresh bread.
OKAY, YUM. This soup looks SO good- exactly the kind of dinners I love to make this time of year. Low maintenance, comforting and totally delicious.
