Pesto Grilled Cheese – Your favorite sandwich bread slathered with pesto, fresh tomatoes and grilled to perfection. This easy gourmet grilled cheese may be your new favorite lunch.
This easy yet gourmet sandwich just may become your new favorite! If you’re a pesto fan, you’re missing out if you haven’t tried pesto on grilled cheese. It’s amazing! That nutty basil flavor with cheese is SO good!
Here I add fresh tomatoes for flavor and a bit of crunch.
Do you have a favorite cheese when you make grilled cheese sandwiches? I do not. I swap back and forth between Muenster, Swiss, provolone, American and even occasionally cheddar or mozzarella. Skies the limit when it comes to making your sandwich. Choose a cheese that melts well and for the flavor you enjoy.
Grilled cheese and tomato soup are one of my go-to lunch options since I am home most days. Creamy tomato soup is so comforting on cooler days and I love the taste of tomato!

Pesto Grilled Cheese
- 4 slices good sandwich bread
- 4 slices provolone cheese
- 2 Roma tomatoes sliced
- 2 tablespoons softened butter
- Spread four slices of bread with pesto. Layer with cheese and tomato; top with remaining bread. Butter outsides of sandwiches.
- In a large skillet over medium heat, grill sandwiches for 2-3 minutes on each side or until cheese is melted and bread is golden brown.
