I’m the kind of shopper who can be totally guilty of buying something just because it’s cheap. Not all things. But yes, some things.
I couldn’t resist decent sized watermelons – $1.49. Oh yeah, grabbed a couple. Ran into a friend there and she grabbed a couple too.
Um, let’s see now. What can I do with all this watermelon? She mentioned freezing it. I told her I had done so before and made sorbet.
So I promised my friend she would see watermelon sorbet on the blog. So, here it is. Love you, friend!
Such a simple frozen dessert. Few calories. Low fuss. Easy weeknight dessert. Also perfect for company.

Watermelon Sorbet
Ingredients
- 3 cups water
- 1 cup sugar
- 4 cups seeded chopped watermelon
- 1/4 cup lime juice
Instructions
- Bring 3 cups water and sugar just to a boil in a medium saucepan over high heat, stirring until sugar dissolves. Remove from heat. Cool.
- Using a blender, combine sugar syrup and watermelon, in batches. Blend until smooth Stir in lime juice. Cover and place in freezer 2 hours. Serve. Or place in a freezer safe container for several weeks.
