Coconut Roasted Almonds – Super simple nuts are coated with sweet coconut. Only 4 ingredients; these are easy to roast. Perfect for the holidays or to give as gifts.
One wonderful day I was cruising through Wegmans bulk section and stopped to get some nuts. Lo and behold I found these beautiful little things called Coconut Macaroon Almonds. I bagged up and few and hit the road.
1 hour later —> I sat at my desk. I opened the bag. I inserted one into my mouth. I inserted all the rest. I put my hand back in the bag. Gasp! They were gone. How did I do that? I know. They’re flipping delicious. That’s how I did it.
So that’s where this recipe came from. Almost every time I have something delicious from out and about, I try to recreate it at home. Well within a certain realm of foods.
These were easy peasy to mix up. It was just the patience of roasting them. AKA – waiting for an hour for them to become golden and perfect for my mouth.
You’ll want to present these as gifts for the holidays. They truly are simple and ideal. I know I enjoy homemade goodies. Who wouldn’t want some delicious home roasted nuts to munch on for Christmas?
I hope you give these a try. Probably one of these easiest recipes on my blog to date!

I wonder if this would work with cashews. I love the coconut cashews at Costco.
I’m pretty sure it would Kathy! Let us know how it turns out if you try it.
Yum yum yum
This looks like an incredibly dangerous snack 😉 But I’d sure love to demolish that whole jar!
So glad you stopped by Consuelo! I’d be happy to share. 🙂

4 ingredient addicting nuts – yup – these would be AH-mazing Christmas gifts! Thanks so much Melanie and Happy Thanksgiving!
Oooooo, simple ingredients and outta-this-world flavor! I know I’d be happy to get a jar of these for Christmas, and I’m pretty sure it’d be empty in 2.5 seconds!
Oh man, I would have trouble keeping my hand out of that jar! These would be gone in NO TIME.
I’m OBSESSED with all things candied nuts, and I’ve never tried a coconut varietal!! It sounds so good! And heck yes, perfect for holiday gift bags! I’ll have to roast up a triple batch so that I don’t run the risk of “running out,” i.e. have not enough nuts for my own personal snacking delight.
Girl, I know you’re the coconut queen so I’m not surprised you ate the whole bag! They sound phenomenal, and I love how easy the recipe is. Good one for gifts, for sure!
Oh my goodness I can’t even express how amazing these look! I will be trying these no doubt!

Coconut? Say whaaaat? These would’ve been gone in seconds if I had made them. I have NO control when it comes to coconutty things. I am totally making these and giving them out as neighbor gifts! Love and pinned 🙂
Me too. That’s why it’s best that I give them away. 🙂 Thanks for stopping by Michelle!
Made these and they are really tasty, however I have one issue with the recipe and that is the coconut doesn’t stick to the nuts so you are left with a pile of candied nuts and pile of coconut. Followed the recipe exactly. Any ideas why the coconut didn’t adhere to the nuts???
Hmmm…that is weird. I haven’t made these this year at all. But I don’t recall having that issue.
Did you use sweetened or unsweetened coconut?
Unsweetened coconut what???? Im not sure what to use , you mean shredded coconut or coconut milk? Or coconut something? Can someone please give me the specifics of the coconut? Thanks! :p
Hey Jayce, that would be unsweetened coconut flakes. I’ve included a link in the recipe to help in finding them. Enjoy!
I don’t see a link in the recipe to help finding the unsweetened coconut flakes.
