Blueberry Bread Pudding – Sweet dessert made with fresh or frozen blueberries and crusty bread served with a homemade blueberry sauce. A perfect way to enjoy berries in the summer. Soft, creamy and delicious.
We’re here with another blueberry dish. Hopefully if you’re like me this will come to you as a happy moment. I love blueberries and all things berry, really. When strawberry picking season gets ready to roll around I get uber excited and I dream up visions of short cake, slushies and freshly made bruschetta. I torture my kids to pick berries. When in fact they used to really enjoy it but now I think it’s mostly me that enjoys it. They’d much rather be off playing or day dreaming.
But I convince myself that memories are being made here. Blueberries are my second favorite berries to pick. And I swear up and down that they seriously taste 10x better when picked fresh versus what you get at the grocery store. Can I get an amen?
You’ll find a great variety of berry recipes here on the blog from bread to quick bread to lemonade and muffins. And the awesome part is that I never fear running out of berry recipes to share because there’s just a wealth of variety where berries are the star of the meal.
I’ve been wanting to post a bread pudding for awhile but the even cooler thing is that I now get to scratch off an item on my recipes to bread conquer list. Woot! Why do I feel so much better when I conquer a goal? It’s so rewarding, right?

Blueberry Bread Pudding
Ingredients
- 3 large eggs
- 2 cups half and half cream
- 2 cups milk I used 2 %
- 3/4 cup sugar
- 3 teaspoons vanilla extract
- 2 cups fresh or frozen blueberries
- 1 loaf 1 pound French bread, cut into 1-inch cubes
Blueberry Sauce
- 1 cup blueberries
- 3 tablespoons sugar
- 1 tablespoon water
Instructions
- Preheat oven to 350°. In a large bowl, combine eggs, cream, milk, sugar and vanilla. Stir in blueberries. Combine mixture with bread cubs. Allow to stand 15 minutes or until bread is softened.
- Transfer to a greased 13-in. x 9-in. baking dish. Bake, uncovered, 45-60 minutes or until a knife inserted near the center comes out clean. Let stand a few minutes before serving.
For sauce:
- In a small saucepan, combine blueberries, sugar and water. Stir often and bring just to a boil over medium-high heat. Allow to cool slightly or serve at room temperature. Serve with bread pudding.
