Wake up America! Today is National Pina Colada day and I can’t think of a better thing to celebrate on July 10th in the heat of the summer. Woo-hoo. Let’s get some icy cool refreshment, whether it be fruit dip, an easy breakfast smoothie or these delicious Pina Colada popsicles.
I’ve been a coconut fan for as long as I can remember and I especially love it when it’s in ice cold drinks so these homemade Pina Colada pops were just bound to happen sooner or later. The first time I made them the kids inhaled before I could even get any pictures.
So of course, I had to make them again, but I guess I should be eternally grateful that they like healthy treats too.
These popsicles have:

So, what are you waiting for? Get your pop mold and mix it up. These are SUPER easy to make. Just mix the ingredients, pour into the molds and let freeze for several hours. So much better for you than what you can buy in the frozen grocery dept.

Pina Colada Popsicles
Ingredients
- 1/2 CUP pineapple or pina colada juice
- 1/2 cup crushed pineapple
- 1 cup canned coconut milk
- 1/4 cup shredded coconut sweetened or unsweetened
Instructions
- In a medium size bowl, combine pineapple or pina colada juice, crushed pineapple, coconut milk and shredded coconut.
- Stir all the ingredients and pour into 4 individual popsicle molds. Place in the freezer for at least 4 hours.
