Today I’m serving up my favorite chicken salad recipe. I know everyone has their own way to enjoy it but here’s mine, chock full of chicken, celery, and hard-boiled egg. If you don’t like the sounds of it, that’s ok, I don’t love the grape and cranberry variety. So we can just be cool with our differences.
But if you’re up for trying a new chicken salad recipe, give it a go. If you enjoy a hard-boiled egg, give it a try. And most of all… definitely try it if you love rotisserie chicken. The flavor makes it out of this world amazing!
I have this slight obsession with Costco. I love the atmosphere. It’s got to be the amazing selection. And oh how I love their brand name products. It’s just the overall experience in general.
Usually, when I’m there I’ll grab a rotisserie chicken. There are so many ways I can take advantage of this pre-cooked entrée. I know I could save a buck or two by cooking one myself. But hey, I treat myself once in a while. Not having to cook an entire meal saves me sanity and a time. And it’s OK every once in a while.
I sometimes bring it home and serve it with spinach ravioli, pasta or rice. Add a steamed veggie and it’s a meal. Other times I shred it up and use it for chicken tacos.
Rotisserie chicken salad is probably my favorite way to serve it. I’ve always been a chicken salad fan. There are many ways out there to prepare chicken salad. Trust me, I know. There’s the almond grape variety. There’s the olive variety. You could practically add anything your heart desires. Well besides ketchup or chocolate. That would just ruin it.
But anyway, this happens to be my favorite way to enjoy chicken salad. Time will pass and my taste may change but this is a perfect lunch for me. Especially on a home-baked roll. Mmm. Excuse me. I gotta go. Lunch is calling me.

Rotisserie Chicken Salad
Ingredients
- 3 1/2 - 4 cups rotisserie chicken shredded or diced
- 1 hard boiled egg chopped
- 1 celery stalk diced
- 8-10 slices of good sandwich bread
- 1/4 teaspoon dill
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 4-6 lettuce leaves
- 4-6 to mato slices
Dressing:
- 1/3 cup mayonnaise
- 3 Tablespoon plain Greek yogurt
- 1 1/2 teaspoon Dijon mustard
Instructions
- In a medium bowl combine mayonnaise, Greek yogurt, and Dijon mustard. Mix well. Add chicken, chopped egg, and celery. Sprinkle with dill, salt, and pepper
- Serve chicken salad on bread. Top with lettuce and tomato.
